Three Ways to Make Eggs Without Using Your Stove!
If you are a person living with epilepsy who is living on your own and you want to cook for yourself, the stove can seem daunting.
To me, having a hot pan on a hot element on my stove screams danger if I ever were to have a seizure while I was cooking.
When I first moved out on my own 6 years ago, my health was doing great, so I felt comfortable using the stove.
However, when I had an increase in my seizure activity 4 years ago, I became fearful of the stove. I was worried I would harm myself on it.
I felt a huge loss of independence from not being able to cook so many of the things that I love and I had to find different ways to cook without using a stove.
When it comes to breakfast, eggs are a staple for me. I eat them every day that I’m home in the morning. The great part is that there are so many ways to make eggs without a stove – here are a few of my favourites.
Egg Muffin Cups: These healthy egg bites are delicious and easy! You can add a variety of ingredients from spinach to cheese to add some variety. To see my favourite recipe for them, click here.
Microwave Scrambled Eggs: There is nothing better that cheesy scrambled eggs! The best part is the microwave version is quick, safe, and super easy to clean up after. A great recipe on how to make them can be found here
Instant Pot Hard- and Soft-Boiled Eggs: I LOVE my Instant Pot pressure cooker. No cooking elements in the Instant Pot are exposed, so it greatly lowers the chance of injury if you were to have a seizure while cooking. It also provides a lot of versatility when cooking. I make both hard- and soft-boiled eggs in my Instant Pot. You can find a guide on how to do it here.
The kitchen can seem very scary for someone living with epilepsy, but with the right tools, recipes, and a little support, cooking can be a safe and fun thing!
