3 Purple Recipes to Celebrate Purple Month!
March is Purple Month where we get to raise awareness of epilepsy and go above and beyond in talking about and sharing our epilepsy journeys. This can be done in so many ways but sharing purple food to start the conversation is one of my favourites … I just really like any excuse to eat good food!
Here are 3 fun and delicious purple recipes to help you celebrate Purple Month:
Purple Sweet Potato Dinner Rolls – Recipe by Wild, Wild Whisk: This recipe is not the easiest, but it is SO delicious. The purple sweet potatoes make for a hearty, slightly sweet, but still savory dinner roll. The outside of the dinner roll turns out a more traditional dinner roll colour so I find it fun to cut one open and have the vibrant purple on the inside. Check out the recipe here.
Roasted Purple Potato and Cauliflower Soup – Recipe by Wife Mama Foodie: I’ve never tried purple cauliflower before and wasn’t even sure where to buy it but, sure enough, my local supermarket had it in stock! This soup was shockingly easy to make and was delicious. I roasted my vegetables and then used my Instant Pot instead of my stove to finish the recipe. A huge win is that this recipe is vegan and gluten free as well! Check out the recipe here.
Frozen Yogurt Bark with Berries – Recipe by Diet Hood: I love frozen yogurt and make frozen yogurt bark fairly often. It’s a super simple way to spice up your diet without much change (and it’s super easy to make!) To make this purple simply use a purple-coloured yogurt as your base (such as blueberry or mixed berry) and then add blueberries to top it off! I cheated and added some chocolate on top of mine too – but really you can add anything! I’ve even made it with gummy bears once! Check out the recipe here.
